refactor(infra): replace Eloquent directory adapters with direct QueryBuilder adapters and mappers
- Replace Eloquent models for replicated Oracle tables with direct QueryBuilder directory adapters
- Bind ArcadiaEmployeeDirectory, ArcadiaIncoSheetDirectory, ArcadiaIncoShortSheetDirectory, ArcadiaIncoCompositionDirectory, and ArcadiaMarqueBrandDirectory
- Remove obsolete Eloquent directory classes and models
